Protocol Review
For food manufacturing facilities in Brisbane & South-East Queensland. Brisbane is not Edinburgh — your cleaning chemistry needs a seasonal review. Check every item and see your protocol readiness score.

Quaternary ammonium sanitisers lose up to 40% efficacy in water above 40°C — in a Queensland summer, that's your tap water. Use this checklist to conduct your seasonal protocol review before warmer months arrive.
Why warm weather affects your cleaning protocols in SEQ
- Chemical dilution rates may need recalibration — SDS values assume standard temperature conditions
- Contact surfaces dry faster, reducing the effective contact time of sanitisers
- Cold room seals degrade faster under heat cycling, increasing cross-contamination risk
- QAC sanitisers are particularly sensitive — consider peroxyacetic acid (PAA) in peak summer
01
Chemical dilution re-verification by temperature range
0 / 6
Review current dilution rates for all sanitisers against SDS temperature specifications
Check water temperature at point of dilution — record actual temperature, not assumedTap water in Queensland summer routinely exceeds 30°C
Recalculate dilution ratios if water temperature exceeds SDS specification (commonly 25–30°C)
Verify that QAC concentration testing strips are calibrated and in date
If using QAC sanitisers above 38°C water temp — evaluate switch to PAA or chlorine-based product
Document revised dilution rates and update SSOP (Sanitation Standard Operating Procedure)
02
Cold room seal inspection
0 / 6
Inspect all cold room door seals for cracking, brittleness or visible deterioration
Check seal compression — door should close with firm resistance along the full perimeter
Inspect condensation patterns — unusual moisture accumulation indicates seal failure
Check drainage channels inside cold rooms — confirm unobstructed flow and cleanliness
Verify internal temperature logs — confirm stable temperature after door cycling events
Document all seal inspections with date, inspector name, and pass/fail result
03
Staff hygiene checkpoints for high-temperature operations
0 / 5
Review hand hygiene frequency — heat increases perspiration and cross-contamination risk
Confirm PPE remains appropriate — some glove materials degrade in sustained heat
Check ventilation in chemical storage and mixing areas
Ensure staff are briefed on heat-related changes to chemical protocols
Verify rest break schedules don't create unmonitored gaps in cleaning coverage
04
Documentation — FSANZ warm-weather protocol requirements
0 / 5
Record the date of seasonal protocol review with responsible manager sign-off
Update SSOP documents to reflect any revised dilution rates or chemical substitutions
Confirm all SDS sheets are current, accessible at point of use and within 5 years
Log any product substitutions — chemical name, reason for change, effective date
File this completed review with your HACCP documentation for audit accessFSANZ Food Safety Standard 3.2.2 requires cleaning records to be retained
Recommended frequency: Conduct this review at the start of warm season (Oct/Nov) and cool season (Apr/May) — twice yearly minimum for Queensland food facilities.

Recommended review frequency — Queensland climate
| Review item | Trigger / condition | Minimum frequency |
|---|---|---|
| Chemical dilution rates | Every season change + after any supplier product change | Quarterly |
| Cold room seals | Monthly visual + full inspection in Oct/Nov before QLD summer | Monthly |
| SDS currency check | When any product changes; confirm all within 5 years | Annual |
| SSOP document update | After any protocol change — chemical, dilution or procedure | As needed |
| Staff protocol briefing | Before any seasonal protocol change takes effect | Seasonal |
| Full protocol review (this checklist) | Start of warm season (Oct/Nov) and cool season (Apr/May) | Twice yearly |
